The Greatsword and Great Axe are very slow, and harder to use. They also have high stat requirements. The Claymore is nice because it has lower stat requirements, and Faith builds don't want to put too much into unnecessary stats. Greatsword and Great Axe are really best suited for Strength builds in my opinion. Claymore is maybe the best weapon in the game. At least easily in the top 5.
